Two Healthy Vitamin Packed Foods Especially Good for Older People

It's always important to have a healthy diet but it is easy to get into a rut especially if you are an older person living alone. There are a number of foods that are packed with nutrition and are relatively cheap and easy to cook. One of these is the humble pumpkin which has lots of beta carotene. As you get older you need plenty of vitamins and minerals and need to focus on the healthiest foods available at reasonable cost.




Pumpkins

Just like carrots and other brightly coloured fruit and vegetables, the pumpkin is packed with beta carotene. This is the vitamin that gives rise to the saying that carrots make you see in the dark! However, beta carotene is not the only vitamin that is found abundantly in pumpkins which are described as a nutritional powerhouse of vitamins and minerals.

This humble but really tasty and soothing food is brilliant for older people as it is so easy and quick to prepare and is packed with nutrition. Scrambling is one of the healthiest ways to cook eggs as all the nutritional benefits are preserved. Of course eggs are packed with protein - a large scrambled egg contains 7 g of protein - as well as 8g fats, 215mg of cholesterols, 1.3g of total carbohydrates, 1.1g of sugar, 84.2mg of potassium, 2.2g of saturated fats, 2.9g of mono-unsaturated fats and 1.3g of polyunsaturated fats.

One large scrambled egg is also packed with around 320.9 IU of vitamin A, 20.7 IU of vitamin D, 18.3mcg of folate, and traces of other important vitamins like riboflavin, vitamin B12, and vitamin C, as well as traces of pantothenic acid. Eating scrambled eggs regularly provides you with a lot of antioxidants that are useful for healthy skin, hair and stronger immune system.
